In fact, it freezes, but beardies will bury themselves in the best possible places (that your enclosure won't provide). I never worry much about forcing burmation, as falcon said they usually will just do it themselves without touching the temps. Night temp changes are enough to let them know and often beardies may come out mid winter for a weeks basking, a few bugs, and go back into burmation ( but thats the difference between burmation and hibernation) Reptiles in the wild still come out to bask on warmer winter days.
