As soon as you can. The longer you wait the more they are used to live food and the harder it will be to get them to eat their veges. Even if they won't eat them, give them a small plate of chopped veg anyway, soon they will tuck into it straight away. I feed bok choy, cucumber, zucchini, squash, peas, little bit of carrot, snow peas - not all of them all at once, sometimes just bok choy and squash. Fairly finely chopped. There are lots of veg they will eat, theres an article somewhere, just do a search on bearded dragon food.
