Yeah all my enclosures have probe thermostats, mine are the metal probes and which would be more sensitive then the plastic ones quote me if im wrong, but the plastic probes never seemed be accurate.
I keep my probe close to the heat source, so i also you a thermometer and set the thermostat to what temp i need to what the thermometer reads. I dont rely on the dial as it may be out of place, alway check the temps with a thermometer and adjust to what you want, i also use a safety cut of switch with every thermostat.
