Going back to high school biology but I don't think the CO2 is absorbed at all. Essentially it is used as a simple method to remove the oxygen from the air. The end result is that the rats blood will not be oxygenated, again causing no issue to the snake. If you've been buying rats/mice you could guarantee that they will have been killed in the same way.
