As far as i know snakes cannot purposefully vocalise any sounds (hissing included), however, many species and individuals seem to hiss. I think this "hissing" is simply a response the snake has to the presence of a potential predator (big scary human) as it's breathing increases, HR goes up etc. etc.

Don't hold me to this but i am 70% sure that a snake will not voluntarily hiss at a predator.
