Most wired probe thermometers are more accurate (typically +/- 1 degree) and they are very handy as you can know the gradient at either end just by looking and not needing to get your thermometer out. However IR ones can you used so quickly to measure the surface temperature of things like hide rocks and the reptile ITSELF.

So if you can afford it i would recommend both.
