Why can't you use linseed oil (and turps mixture) as a varnish?

Firstly it's low toxicity when the turps evaporates off and secondly leaves a beautiful finish.

I personally haven't used it, but can't see why you wouldn't be able to. I'm all happy to be proved wrong if someone has reason to believe so!
