Simon Archibald did a really good care sheet on Sand Monitors. I think there is a link for it on this site under Care Sheets.

some populations of black headed monitors have been found at 3 foot lengths, thats 90 cm,ridgeys are your best bet to start with as well as gillens,2 excellent species, sandys are a handful,if u have been charged by hungry adult sandys for a feed,u will know what i mean, lol, also u dont need to give sandys 3 feet of sand to burrow in,i foot is ample for them to create burrows ect,3 feet of soil indoors would be a right pain in the butt, especiaaly if they lay eggs

Luke, go to the library and borrow the booking on Keeping Varanids. The book is out of print their are a few libraries that has it. It will cover all the species you may want. Keepers who do have this info probably can't be bothered re-typing all the info everytime a thread like this comes up.

Keep an eye out for who's doing the talks at AHS in the city. If Andrew Melrose or David Kirschner are doing the talk, make sure you don't miss it.
