You say he was shedding when you got him, and you have handled him heaps since you got him - this could be the cause of his trouble shedding...
I don't know how old he is, but I would also suggest that handling him heaps in his first 10 days is not a good idea as he has not had a chance to settle in...
...after all of that though, I would imagine he bit you because he is still shedding and your hand was there - snakes are a lot more defensive when shedding as their vision is impaired a lot - a bad shed can also indicate stress...I would suggest giving him a light spray and/or a large bowl to soak in - once you have made sure he has shed correctly leave him alone for a week or so to settle...
