She has grown alot, still feeding on pinkies but ive been getting bigger ones and she gobbles them down. Am i feeding her too much being every 7 days?

From the information you provided, your feeding regime is fine. I would upsize the meal to say 1 fuzzy every 7 days or 2 pinkies every 5-7 days. What are the shedding intervals. If it is between 4-8 weeks it's growing fine!
