any ideas?

We gave him daily warm baths to help him along. We also tried to keep his hydration levels up by offering fruit juice (watered down) with an eye dropper. Eventually he pooped and since then, he's been going around once every week and a half. So it may just be completely normal.
I was told to give daily warm baths, and to gently massage along the right side of his belly from under the arm down to just before the vent. If you feel a lump, then he may be impacted. But seeing as he is not on sand, that probably won't be the case. As far as I am aware roaches cannot cause impaction. He doesn't eat mealworms does he?

I was told that pooping once or twice a week was normal for some adult beardies, while others poop daily. He seems happy and healthy in every other way, so I can't say I've really been too concerned by his infrequent bowel movements. Should I be?

It's definately not 2-3 times per week, more like 2-3 times per fortnight. Keeping in mind though, that we only got him a month ago so we haven't quite figured out his routine yet. And as I said, he's just decided recently that he's going into brumation - all I can see of him is an inch or two of tail sticking out from under his drift wood
