There is nothing wrong with them, the second egg will be hidden under an organ, you can't always see them both but they'll be there. If she hasn't started digging yet she's probably not going to be ready to lay just yet either, once she starts digging check her every day. Many species tend to lay in the morning so don't disturb her during this time (so if you go to work early just check when you get home).

Am I likely to see her digging?
Maybe but just check the laying container and if it's all dug up then it's been digging. Or else (and what I find best) just look at the female every day. The day she losses a heap of weight look for the eggs.
