Stimson not pooping.

My Stinson has not pooped after her last two feeds. Should I be worried?

The frequency of defication relates to the amount and quality of food being consumed. If for example you are only feeding pinkies (which are mostly water) it is likely your snake wont poo often. How frequently and what are you feeding your stimpson , which is how old and big?

She is 3 years old and about a metre long. I was feeding her 2 hopper rats every 10 days and she was pooping fine, then I changed her to 1 hopper rat every 7 days and no pooping.

What are the temperatures in her enclosure (Ambient, hot end, cold end) and the humidity?

also you need to look at heating, if its colder, food doesn't digest as fast. Or may be in shed and will give a nice big poop when it sheds.

I personally don't feed my snakes till they poop. Should be fine though.
