Brumation- How Should I Go About It?

Quick backstory-
Last year I had so much trouble getting my Stimsons to eat to the point he was loosing condition.
Someone suggested to follow a more natural day/night cycle instead of 24/7 heat. Couldn't hurt at that point, so I got myself a timer for 7am-6pm. Even just a week later he really perked up and began to really actively seek out food instead of staying inside his hide 24/7.
He's been eating so well ever since, and with winter approaching, I was considering brumating him as I've heard that can really help them out.

From what I understand, i still would want to offer a couple hours of heat a day?
And start gradually reducing his hotspot hours about now?
If I was to brumate him over winter (June-August), when would his last meal be?

Would I still be alright to handle him during brumation? Or even just 'check up' on him every other day or so? I get very panicky when I'm not about to look in on him and make sure he's doing well.
