I'm just wondering whats the best temps to cool down you geckos over winter for breeding
I've got N. Levis Levis and N. Amyae
I've tried looking for some care sheets but they don't say what temp to cool down too

The keeping and breeding geckos and pygopods book by danny brown has all of that info + more. I recommend buying it
 
Try 15 - 20 Celsius day , 12 - 15 Celsius night.

Danny Brown favors natural ambient temperatures on his geckos , though states Brumation can extend your geckos lifespan , by how much is not mentioned , though I think it's more that geckos will breed themselves to death and a break does help every living organism so it makes sense.

Bathurst has cold mornings and warm days so a thermostat might be useful Knoxxy.

yes i have all my geckos and pythons on thermostat as here in bathurst it get down to around 0-3 degrees overnight so very cold
I'm about to buy that book everyone i know loves that book and raves about it
