If there's no scientific data, then how do they know they get to be that old?

Quite possibly they know the age of this particular specimen? I think the comment was meant for the species overall.

They dont.

It is a guess based on how long they take to reach maturity and through observations made so far. Its going to be a very long time before they can provide definitive longevity data for these reptiles.
