Wiring thermostats to heat elements?

The melamine enclosure I bought came with a thermostat that I feel isn't sensitive enough... I found the manual online and since it's a household thermostat, its temp sensitivity is only accurate within ~4-5C... I bought an Inkbird thermostat whose variance is ~1C... But I don't have experience rewiring things.

Is this something I can learn to do myself, or do I need to get a sparky in?

It's easy enough to do, but not legal, and if you do make a mistake it's potentially very dangerous. Do whatever you want with that.
