After some discussion in chat this afternoon a few members and myself decided that if there is one thing APS needs it's a recipe thread.

To start us off...

TOBLERONE CHEESECAKE

1 cup plain chocolate biscuit crumbs
1/3 cup (80g) butter, melted
1/4 cup ground almonds
500g Philadelphia Cream Cheese, softened
1/2 cup caster sugar
200g Toblerone Milk or Dark Chocolate, melted
1/2 cup thickened cream
200g Toblerone Milk or Dark Chocolate for shaving

1) Combine biscuit crumbs, butter and almonds, press into the base of a lightly greased 22cm springform pan. Chill.

2) Beat Cream Cheese for 2 minutes or until smooth. Add sugar, melted Toblerone chocolate and cream, continue beating until well combined.

3)Pour onto the prepared crumb base and refrigerate 2 to 3 hours until set, or overnight. Serve topped with the Toblerone shavings.

For Entree's

Try something easy... hehe... You can either do this all from scratch or buy pre-made pita breads.

From scratch...

You will need one bread machine or a lot of time - I will give the bread machine way - cause that's easy.

Sambal Olek - Pita Breads
290mL of water (30 - 35'C)
2 Tbsp of Olive Oil (pref extra virgin)
1 1/2 tsp salt
2 tsp raw sugar
2 - 3 tsp of Sambel Olek
2 - 3 cloves of garlic
2 tsp of dried herbs - basil is good with thyme
3 cups or 480g of Spelt Flour
2 1/2 tsp of yeast (you know you can keep yeast int he freezer for ages and ages)

Put in the bread machine in that order and set it to mix and rise but NOT bake - stop it before the baking cycle begins.

Roll dough on floured surface and cut into 8 even pieces and roll out flat (15 - 18cm circles).

Oven should be at maximum temperature and if you have a cast iron pan, place in the bottom of the oven so that when you open the door there's no sudden temperature change.

When oven is hot enough scoop the pita breads onto either the cast iron pan (one at a time) or on to a seperate pizza pan or the like.

Bake for 3 - 4 minutes watching carefully.

Take out and leave to cool.

When cooled (or you're using purchased pita bread) brush both sides with olive oil, top with herbs and bake for 6 minutes on 200'C or until lightly crispy and serve with basil pesto or salsa.

I find the best seasoning ever to put on them is the pre-made Thai seasoning. It's the yummiest!

For mains -

Get two fillets of salmon with skin on. Fry, skin side down and top with a mixture of fresh bread crumbs, olive oil, basil and chilli (see below).

To make bread crumbs just add two - three peices of bread, teaspoon of chilli, fresh herbs and food process till crumbed. Pour over two tablespoons of olive oil and mix.

Add the crumbs to the non-fried side of the salmon and place under grill until crumbs come crispy and fish is cooked right through.

Serve with fresh garden greens (butter beans and corn is good).

My bread machine book has Cheese and Herb Damper, Corn and Capsicum Damper, Bacon and Chive Damper, Oatmeal and Honey Damper...

Any that you want?

Cheese and Herb Damper (machine recipe only sorry)
3 cups of self raising flour (480g)
1 tsp salt
20g melted butter
1/4 cup mozzarella and parmesan grated
2 tsp mixed dry herbs
150mL of milk
130mL of water

Bacon and Chive Damper
same as above but replace cheese and herbs with:
1/4 cup chopped bacon

Olive oil

Heat 1tblspoon olive oil in a fry pan. Plave choped onion, garlic and sliced chorizo in pan anf fry until onion is cooked and chorizo is browned. add diced chicken. Once cooked add sliced capsicum. sundried tomatos and tinned tomatos. Cook for 5 minutes then add herbs and simmer for 15minutes. Serve on top of your favorite fresh pasta with shaved parmasan(SP) cheese.

This one is good for those left over snags!
Herbed Sausage Casserole

6 cooked sausages
2 X tin tomatoes OR 4- 5 tomatoes, diced, & 1 X jar Garlic pasta sauce
Any veg you have in freezer eg beans, peas, corn, carrot, broccoli...anything
Herbs eg Basil, chives, Thyme [ tiny bit ], garlic.

Cut sausages into bite size bits & put into saucepan [ big ], cover with tomatoes & sauce[ if using ] heat on medium for 10-15 mins covered. Then add veg & herbs & leave simmering until veg are cooked. Serve with rice, pasta or couscous [ couscous is gooood with this one] & a hot dinner roll.......mmmm. Eggs in milk. My favourite breakfast.

Break three eggs into a large glass.
Add milk (full cream works best).
Drink.

Delicious, nutritious, cheap, convenient.

Put lamington in cup or bowl , cover in cream or custard , nuke for 50 sec on high . Sugar rush can only be beaten by Tim Tam Slam ; Nibble diagonal corners of Tim Tam then use it like a straw to suck hot chocolate through . Be ready to eat Tim Tam as it colapses into warm , gooey chocolate mess .
