Hi, I have recently got my 1st snake she is about 2 years old. I have been feeding here once a week on an adult mouse. I was wondering how do I know if Im feeding her enough or do i need to feed her more?

Depends on how big your stimi is. How long/heavy. Easiest thing as a rule of thumb apart from learning their mannerisms, weigh your snake and feed it 15-20% of it's body weight. If you give it that sort of quanity you should find it only wants to be fed roughly every 2 weeks. My Mac is 2, 1.2m, 476gr. She eats two 40-50gr rats or three 30gr rats or mice per feed roughly every two to two and half weeks.
